Simply Wize Gluten Free Crusty Bread Mix is made from quality ingredients to create a dough with the same texture as a conventional bread dough, making it easy to make delicious gluten free loaves, GF rolls or even free from gluten pizza base! It is dairy free and fructose friendly so now even those with food allergies can enjoy bread again!
This versatile dough can be made by hand, using a mix master or a bread maker.

- 330g Crusty Bread Mix
- 1 sachet dry instant yeast
Other ingredients not included:
- 265ml lukewarm water
- 1 tablespoons vegetable oil
- Preheat your oven to 220°C.
- In a small bowl, blend water and yeast and let sit for 5 minutes.
- In a large bowl, add Simply Wize Gluten Free Crusty Bread Mix, oil and the yeast mixture. Combine all ingredients together with a spoon or hand held electric mixer, beating for 1-2 minutes. Continue to knead the dough by hand on a bench lightly dusted with rice flour or cornflour for 10 minutes - until the surface of the dough is smooth.
- For the dough into a ball, cover with a tea towel and allow to rest for 5 minutes.
- To create a crusty loaf of bread, flatten the dough to the thickness of approx 1cm and roll it up like a Swiss Roll.
- Place on a tray lined with baking paper, cover with a moist towel of clean plastic and leave to rise in a warm, draft free area until double in size (approx 1 hour). Using a sharp blade lightly cut the surface of the dough piece 3-4 times in a diagonal direction.
- Bake for approximately 35 minutes or until golden brown and the loaf sounds hollow when tapped on the bottom.
- Cool on a wire rack.
Bakers Tip: For Best Results, place two ice cubes on a separate pre-heated tray in the oven to create some steam. Steam allows the bread to rise in a uniform manner, creating a sheen on the fully baked product.

Recipe makes one loaf of bread or 8 rolls.
Ingredients:
- 1 box (300g) Low Carb & Sugar Seeded Bread Mix
- 1 1/2 cups milk or water.
- 4 large eggs (6 eggs for high protein bread)
- 2 tablespoons olive oil.
Directions:
- Preheat your oven to 180°C fan forced.
- Grease and line a loaf tin.
- In a large bowl whisk milk (or water), eggs and oil until combined. Add the bread mix and stir with a wooden spoon for one minute or until the mixture is smooth.
- Scrape the batter into a prepared baking tin and let it rest for 10-15 minutes.
- Set to bake for 55-65 minutes.
- Remove from the tin and cool on a wire rack.
Recipe Idea: To make rolls, spoon the batter into an 8 cup muffin tin and bake for 30-40 minutes. To reduce fat replace milk with water and use 4 eggs instead of 6.

This gluten free bread mix is a dairy and soy free mix that kneads and tastes like a real wheat based dough. Use it to make pizza bases, bagels, ciabatta, vienna, baguettes and challah bread.

- 10g yeast sachet
Other ingredients not included:
- 1 3/4 cups (440ml) warm water
- 2 tablespoons (40ml) oil
- 1/3 cup (50g) rice flour
- Additional olive oil for brushing
- In a large bowl combine water and yeast and stir to dissolve, add in the oil and the crusty bread mix and mix with a wooden spoon until all ingredients are well combined.
- Leave the dough to prove for 10-15 minutes.
- Dust your bench with flour (rice flour works well) and turn your dough onto the floured surface.
- Lightly coat hands with oil and gently knead for 1-2 minutes. Separate dough and shape as desired.

Ingredients:
- 130ml Warm Water
- 4g Instant Yeast (=11/3 Tsp)
- 1x Large Egg* (50ml)
- 25ml Olive Oil
- 1/2 Tsp Mixed Herbs
- 1 Tsp White Vinegar
- 40ml Yoghurt* (or Dairy Free Yoghurt)
Directions:

Preheat Oven to 220-240°C (or as hot as your oven will go). Place pizza stone on oven rack.

Sift Mix into the mixing bowl of an electric mixer. Add Oil and vinegar and mix until the mix resembles coarse crumbs.

Another bowl add warm water blend in yeast followed by egg* & yoghurt*. Carefully pour into the Naan mix.
- Beat on low, then increase speed and beat for 2 minutes. Please note that the Dough will be quite sticky at this point
- Grease a large bowl, scrape Naan dough into bowl. Cover with cling wrap. Allow to double in size (approx. 1 hour).
- Cut into 6 small pieces and roll into balls.
- Dust the dough with some rice flour and using your fingers press into a Naan shape to approx. 3-4mm thick.
- Place Naan onto a greased oven tray. brush with melted Ghee, butter or olive oil. Sprinkle with dried herbs, sea salt & pepper

Bake in hot oven 8-10 minutes or until golden brown and puffed.
- Serve warm Naan with a curry, stew or with cheeses and an assortment of dips.
- TIP, For Dairy Free Option: Use Coconut Yoghurt.
- TIP: Egg Free Option: Grind 1 Tbsp Chia Seeds and blend in 3 Tbsp warm water. Mix and stand until the mix forms a thick gel (Add after Step 2)
